Vodka Sauce

Serves: 6-8
Ingredients
- 1 c vodka
- 1 tsp crushed red pepper
- 2 tsp olive oil
- 3/4 lb prosciutto, chopped
- 1 large clove garlic, minced
- 2 tbsp parsley, chopped
- 2 tbsp basil, chopped
- 1 28oz can Roma tomatoes, with juice
- 2 8 oz cans tomato sauce
- 8oz water
- 1 c heavy cream
- salt
- pepper
Instructions
- In a small bowl, combine vodka and crushed red pepper. Set aside for at least 1 hour.
- Heat olive oil in a large skillet over medium heat. Sautée prosciutto until evenly browned.
- Add garlic, parsley, basil, salt, and pepper. Cook until garlic becomes fragrant, about 1-2 minutes.
- Deglaze the pan using the vodka mixture. Simmer for 10 minutes.
- Add tomatoes, tomato sauce, water and crush into a chunky sauce. Simmer for 15 minutes.
- Stir in the cream and cook for 2 minutes.
Serving
- With a tube pasta like penne or any shape that will catch the chunks well.
- Use as a pizza sauce...not sure why I didn't think of that until recently.
