Red Sauce

Cook time: 4 hours
Serves: 4-6

Ingredients

  • 5 28 oz cans of whole, peeled San Marzano tomatoes
  • 1 white onion, diced fine
  • 4 tbsp olive oil
  • Salt

Equipment

  • Food mill (sorry, I know no other way)

Instructions

  1. Open the cans of tomatoes and drain excess liquid.
  2. In a large sauce pot, add the olive oil over medium-low heat.
  3. Once the oil is shimmering, add the onion and cook until soft. Turn the heat down to low.
  4. With the food mill on top of the sauce pot, mill the tomatoes, scraping the bottom ocassionally.
  5. Bring the sauce to a simmer for about 3-4 hours. Stir frequently, about avery 20 minutes.
