Vodka Sauce

Cook time: 90 minutes
Serves: 6-8

Ingredients

  • 1 c vodka
  • 1 tsp crushed red pepper
  • 2 tsp olive oil
  • 3/4 lb prosciutto, chopped
  • 1 large clove garlic, minced
  • 2 tbsp parsley, chopped
  • 2 tbsp basil, chopped
  • 1 28oz can Roma tomatoes, with juice
  • 2 8 oz cans tomato sauce
  • 8oz water
  • 1 c heavy cream
  • salt
  • pepper

Instructions

  1. In a small bowl, combine vodka and crushed red pepper. Set aside for at least 1 hour.
  2. Heat olive oil in a large skillet over medium heat. Sautée prosciutto until evenly browned.
  3. Add garlic, parsley, basil, salt, and pepper. Cook until garlic becomes fragrant, about 1-2 minutes.
  4. Deglaze the pan using the vodka mixture. Simmer for 10 minutes.
  5. Add tomatoes, tomato sauce, water and crush into a chunky sauce. Simmer for 15 minutes.
  6. Stir in the cream and cook for 2 minutes.
